Damijan Podversic's Ribolla Gialla ferments with the skins in truncated cone-shaped oak vats for 60–90 days. After maceration, it is aged in 20–30 hl barrels for 3 years and then refined in bottle for 1 year. The sediment in the bottle, which is specific to the wine, preserves and protects it. It is best served at 15°C.
