Livio Felluga's Ribolla Gialla is produced starting with the September harvest. Healthy, perfectly ripe grapes are harvested strictly by hand, placing them in small crates to preserve their integrity. They are gently destemmed and left to macerate for a short period, then softly pressed, and the resulting must is clarified by decantation. This is followed by temperature-controlled fermentation in stainless steel tanks. After fermentation, the wine is aged on the lees for several months to enhance its complexity, creaminess, and aging potential. Once bottled, it rests in temperature-controlled cellars for maturation.
