Ribolla Gialla Movia is produced with the Italian grape of the same name. The name ribolla derives from the verb ''ribollire'' (to boil). The bora wind cooled the cellars, thus blocking the fermentation of the wine, which only resumed with the arrival of spring. To save on sulfates, Ribolla producers used the grape marc to induce fermentation. For this reason, Ribolla at the time seemed sweet and not very pleasant. The grapes are harvested late, by hand, with a very short time between the vine and fermentation, a maximum of two hours. Fermentation begins with natural yeasts, selected from the same grapes harvested during the pre-harvest (5%). Fermentation takes place in barriques. Natural processes are used without racking or the addition of any type of chemical products or preservatives. It matures for 24 months in French oak barriques and then ages in bottle for 4 months. This is a Triple A classified wine: farmers, artisans, artists.
