Dalzocchio Pinot Noir is produced in Rovereto, in the province of Trento, by Elisabetta Dalzocchio. Vinification occurs through spontaneous fermentation on the skins and stems in oak vats, without the addition of yeasts or enzymes, and without concentration, respecting tradition and the grapes. Once fermentation is complete, the wine is aged in 228-liter oak barrels for 18 months in cellars dating back to the late 1700s. A truly interesting Pinot Noir. Rich and expressive, especially on the nose, yet also highly elegant.
