The vineyards grow on predominantly gravelly soils, with a high presence of iron sesquioxides. The production process begins with crushing the grapes, gentle destemming, and a long maceration with tumultuous fermentation on the skins at a controlled temperature of 24°C, refrigerated with well water. This is followed by racking and slow fermentation for an additional 30 days. The resulting wine is then aged for at least two years in 2000-liter oak barrels. After bottling and storing in crates of 500 bottles, it is transferred to a temperature-controlled warehouse for further aging.
