The 2021 Weingut Abraham Vom Roten kalk Pinot Noir is a red wine of great elegance and excellent workmanship: at harvest time, the grapes are selected in several steps, then destemmed and transported via a chute to a 20 hl fermentation tank. After a few days, fermentation occurs spontaneously with whole berries thanks to natural yeasts. After approximately three weeks of maceration with careful manual punching down, the wine is gently pressed and clarified by natural sedimentation. Further aging takes place for approximately 15 months in new and used 500-liter oak barrels.
