Cervaro della Sala Antinori is produced in Umbria from Chardonnay and Grechetto grapes. Vinification occurs using the principle of gravity, minimizing energy consumption and maintaining the ideal temperature for the wine. After maceration on the skins, the Chardonnay must is transferred to tanks for decantation and then to small oak barrels. After nearly five months in oak, the Chardonnay is blended with the Grechetto, which is fermented exclusively in stainless steel. A fine wine, also excellent for aging.
