The Coulée de Serrant Nicolas Joly pairs well with fish dishes, white meat, poultry, semi-mature cheeses and vegetable flans.

Coulée de Serrant Nicolas Joly takes its name from a vineyard planted by Cistercian monks around 1130 and which has remained a vineyard ever since. The vineyards are located in the western part of the Loire, where La Coulée de Serrant became a separate appellation. Today, the Joly family owns 7 hectares, cultivated partly by hand and on horseback, due to the steepness of the slopes overlooking the Loire. A master and pioneer of biodynamics, Nicolas has been applying the principles of this philosophy since 1981, which aim to catalyze ''vital energies'' in winemaking. In addition to biodynamic preparations, Nicolas allows sheep to graze throughout the winter to clean the soil, while in spring he applies various ''soothing'' herbal teas: from thyme to garlic, everything possible is used to protect from frost and strengthen the vines. To complete the cycle, a herd of ten cows and a Nantes bull (an endangered breed) provide the necessary annual manure. Everything is harvested by hand in four or five passes, cutting only the grapes at perfect ripeness.
