Paleo Bianco Le Macciole is produced with a blend of 70% Chardonnay and 30% Sauvignon Blanc grown in the Casa Nuova and Ulivino vineyards. Harvest begins in the third week of August. It is vinified off-the-skins for 10 days in barriques and aged for 8 months: 10% in new barriques and tonneaux, 70% in second-, third-, and fourth-use barriques, and 20% in steel.
