What to pair wine with Ronco Della Chiesa Borgo Del Tiglio 2023
Ronco della Chiesa Borgo Del Tiglio favors pairings with dishes with prominent salty and bitter flavors, and with vegetable oil-based dressings. It can withstand extreme pairings that other wines would be impossible to achieve, while still respecting the delicate nature of the dish. Friulano is excellent with sea fish (white), oysters, prosciutto, raw red meat, dry and salty cow's milk cheeses such as Parmesan, vegetables, especially particularly bitter ones, eggs, olives, and soy sauce.
Contains sulfites.
Ronco della Chiesa Borgo Del Tiglio is produced with Friulano grapes grown in the eponymous vineyard, which features brown marl soil and a mild climate, sheltered from cold northeast winds. The vineyard was created by hand-tilling in the late 1950s. The intact subsoil layering of marl and sandstone guarantees water supply to the vines even during the driest periods of the year. The steep terracing of the slope offers excellent root development, a favorable microclimate above-ground, and light reception. The considerable age of the vines ensures superior finesse. The vineyard's genetic complexity is remarkable, having been created using an ancient local mass selection. The Friulano phenotype is 'green.' The planting density is between 4,500 and 5,000 vines/ha, and the double arched training system is used exclusively for Friulano to accommodate the variety's need for a more expansive aerial base. The must is obtained through particularly gentle pressing to avoid extracting flavors and aromas from the skins, which with Friulano can become particularly coarse and bitter, as well as to ensure a 'salty' character. It is fermented in small, used 250-liter French oak barrels, which fully bring out the unique terroir of this small, extraordinary vineyard. The yield of finished wine is decidedly low. The wine is bottled after aging for 9-10 months. It has demonstrated remarkable longevity, with excellent bottles over 30 years old having been tasted.
