Friulano and Ribolla Gialla are the two quintessential native Friulian white grape varieties. The whole grapes, harvested together, are fermented at 4°C for approximately 36 hours before being gently pressed. The resulting must is cold-decanted and then added to a fermentation starter prepared 3-4 days earlier with the finest, selected grapes of the same variety. It then undergoes slow fermentation and aging 'sur lies' at a controlled temperature, frequently in large (30 hl) Slavonian oak barrels. Only after a final, appropriate period of rest and aging in the bottle is it presented to the consumer.
