Vespa Bianco Bastianich pairs well with white meats such as roast chicken or turkey, but also with veal and pork.

Vespa Bianco Bastianich is a blend of Chardonnay grapes. Each grape variety is harvested separately when it reaches optimal ripeness. The grapes are selected on sorting tables before being delicately pressed. This process produces a free-run must that settles directly for 48 hours at 10-12°C (50-54°F) and a pressed must that undergoes further clarification at 10-12°C (50-54°F). At the end of these phases, the two batches of must are combined to begin alcoholic fermentation. The varietals that make up Vespa Bianco ferment separately, 50% in temperature-controlled stainless steel tanks and the remaining 50% in 5- and 40-hectoliter oak barrels. Once fermentation is complete, retaining most of the yeasts, a long period of ''bâtonnage'' (stirring) begins, alternating with racking until May, when the blending of the different batches begins, followed by bottling in July. Aged in the bottle for more than a year completes the wine before it is released for sale.
