Schioppettino Bastianich is produced from the eponymous grapes grown on the hills of Premariacco at 150-200 meters above sea level on typical Friulian soils of Eocene marl and limestone. It ferments in stainless steel tanks and ages half in stainless steel and half in 30-hl oak barrels for 7 months. After clarification and filtration, it is bottled and aged for another 60 days before being released.

Schioppettino Bastianich is produced from the eponymous grapes, selected on sorting tables and subsequently destemmed, crushed, and sent to temperature-controlled steel tanks for alcoholic fermentation. Thirty percent of the grapes are kept at 5-6°C for pre-fermentation maceration. During alcoholic fermentation (approximately 18 days), the entire mass is pumped over several times a day at a temperature of approximately 26°C. Subsequently, separated from the skins, the wine is placed in stainless steel tanks for malolactic fermentation. At the end of this fermentation, the wine begins its aging phase, half in stainless steel and half in 30-hl oak barrels for 7 months. After clarification and filtration, it is bottled and aged for another 60 days before being released for sale.
