Visual tasting

What to pair wine with Schioppettino Bressan 2020
Schioppettino Bressan pairs well with white meat, stews, braised meats and semi-mature cheeses.

Schioppettino Bressan is produced from the eponymous grapes, harvested exclusively by hand after a slight overripeness on the vine to mitigate the high fixed acidity inherent to the variety. The grapes are then pressed, followed by gentle destemming and a very long maceration. Vinification takes place with primary fermentation on the skins at a controlled temperature (maximum 25°C), refrigerated with well water. This is followed by racking and slow fermentation for an additional 35 days. It matures in 316 stainless steel tanks and then ages for at least one year in 20-hl oak barrels. After bottling, the wine is placed in crates of 500 bottles and stored in a climate-controlled warehouse for further aging.
