Tramin Pinot Noir is produced exclusively from the grapes of the same name. The grapes are harvested entirely by hand and placed in small containers to preserve their integrity. Maceration takes place at a controlled temperature (26°C) with daily pumping over and submersion of the pomace to increase the release of nutrients from the skins. Fermentation and aging take place in French barriques, large oak barrels, and small steel tanks for at least 6 months.
