It is handcrafted and meticulously selected, with careful inspection of each individual berry. The grapes arrive at the winery in small containers and are gently pressed with the stems removed. Both alcoholic and malolactic fermentation take place in barriques. After eleven months on the lees in barriques, the wine is racked into stainless steel tanks for an additional 22 months on the lees. Clarification of the must occurs through spontaneous precipitation, after which the wine ages for another four months in the bottle.
