The name 'Mater Matuta' Casale del Giglio derives from the ancient Italic deity, goddess of dawn, protector of nascent life and fertility. It is produced with Syrah (85%) and Petit Verdot (15%). The grapes for both varieties are harvested at an optimal stage of ripeness, with the Syrah occasionally undergoing a slight drying process. The Syrah thus gives Mater Matuta complexity and character, with sweet tannins and intense aromas of morello cherry and spice. For the Petit Verdot, however, the vinification takes place using punching down the cap, allowing for maximum extraction of tannins and polyphenolic compounds. The result is a Petit Verdot with great body and structure that lends itself well to long aging.
