Madreselva Casale del Giglio pairs perfectly with typical Roman dishes, such as oxtail stew.

Madreselva Casale del Giglio is a blend of equal parts Merlot, Cabernet Sauvignon, and Petit Verdot. The grapes are harvested when fully ripe, but at different times. The Merlot grapes ripen in mid-September, while the Cabernet Sauvignon and Petit Verdot grapes ripen rather late. Each varietal in the blend is vinified in red using a different process. After fermentation, the wines are placed in small oak barrels for 18–20 months, during which time they undergo the necessary racking. Blending follows in the aforementioned proportions. Bottle aging lasts 8–12 months.
