Casale del Giglio Cabernet Sauvignon pairs well with medium-aged, unsalted Pecorino Romano.

Casale del Giglio Cabernet Sauvignon is produced exclusively from Cabernet Sauvignon grapes, selecting the ripest ones with low yields per vine. Vinification is done on the skins with punching down during maceration to extract color along with most of the polyphenolic compounds. After the tumultuous fermentation, the new wine is kept in contact with the skins for a few more days to facilitate the extraction of the finest tannins thanks to the presence of alcohol. After careful racking, with the draining pomace moved only by gravity, malolactic fermentation takes place in tanks. Once biological stability is achieved, it is aged in small oak barrels for 18–20 months. This is followed by bottle aging for 8–12 months.
