What to pair wine with Les Vieux Clos Nicolas Joly 2023
Les Vieux Clos Nicolas Joly is a wine that should be uncorked a couple of hours before drinking to allow for proper oxygenation.
Contains sulfites.
Les Vieux Clos Nicolas Joly is produced with 100% Chenin Blanc grapes from the initial part of the Joly family's monopoly vineyard, with vines approximately 30 years old and soils rich in schist and quartz. The harvest is late, and 10% of the bunches are affected by noble rot (botrytis), yet the wine is still vinified dry. The wine undergoes spontaneous fermentation and ages on its fine lees in barrels for eight months. This is a Triple A-rated wine: farmers, artisans, artists.
