Etna Rosso Tornatore is produced with Nerello Mascalese and Nerello Cappuccio. The grapes, harvested by hand in small crates, are quickly taken to the cellar and subjected to manual selection on a conveyor belt. Destemmed and not completely crushed, they are sent to concrete tanks, where they macerate for approximately 10-12 days at a temperature of 22-25°C. Once fermentation is complete, the grapes remain to macerate for a few more days, after which they are drawn off and pressed with a traditional vertical press. They age for approximately 6 months in large wooden barrels and approximately 3 months in the bottle.
