Etna Rosso Benanti is produced with a blend of 80-85% Nerello Mascalese and 15-20% Nerello Cappuccio. The grapes are grown in vineyards on the northern, southeast, and southwest slopes of Etna, located between 450 and 900 meters above sea level. The soil is sandy, volcanic, mineral-rich, and subacidic. The grapes are hand-harvested in October and destemmed. The two varieties are vinified separately. They ferment in stainless steel at a controlled temperature, with a medium-length maceration, using indigenous yeasts selected on the vineyard. Approximately 80% of the Nerello Mascalese ages in stainless steel, while approximately 20% ages in previously used French oak barriques for 8-10 months.
