The Le Mortelle Antinori 'Botrosecco' Cabernet pairs perfectly with traditional Maremma main courses. It's excellent with wild boar.

The Le Mortelle Antinori Cabernet 'Botrosecco' is produced from Cabernet Sauvignon and Cabernet Franc grapes. Upon arrival at the winery, the carefully selected grapes are destemmed, gently pressed, and transferred to stainless steel tanks. Here, alcoholic fermentation takes place at a temperature of approximately 25°C (77°F), enhancing the varietal's characteristic aromatic characteristics and maintaining the integrity of the fruit. During maceration, which lasts approximately 15 days, the cap of pomace is carefully moistened to extract only the finest tannins. The wine is then transferred to stainless steel tanks, where malolactic fermentation takes place, completing by the end of the year. Botrosecco ages for 9 months in barrique before being bottled.
