Sauvignon Tiare is produced from the eponymous grape grown in Dolegna Del Collio. The vineyards extend primarily along the northeast slopes of the Collio region, famous for its characteristic terraced vineyards, where the vines thrive on gentle, fertile slopes at the ideal location and altitude for producing the best fruit. The soil is derived from the disintegration of stratified marl and sandstone present in the subsoil of the Collio DOC zone and is predominantly clayey. The vineyards extend from the Collio to the Isonzo area, covering a total area of 10 hectares. The soils of these vines have a silt-clay composition. Manual harvesting takes place in the first, second, and third ten days of September, depending on the vineyard's location. This is followed by cold maceration and soft pressing. The must is then fermented for 7 days at a temperature of 5°C. Fermentation takes place in stainless steel with selected yeasts for 30 days, followed by refinement on the yeasts, again in stainless steel, until February.
