Sauvignon Movia is produced with the French grape of the same name. It is harvested late, by hand, with a very short time between the vine and fermentation (maximum two hours). Fermentation begins with natural yeasts, selected from the same grapes harvested during the pre-harvest (5%). Fermentation takes place in barriques. Natural processes are used without racking or the addition of any chemicals or preservatives. It matures for 18 months in French oak barriques and then ages in bottle for four months. This is a Triple A-rated wine: farmers, artisans, artists.
