Faro Bonavita is produced from medium-textured soil characterized by layers of clay and calcareous tuff. The grapes are grown without the use of chemical fertilizers, herbicides, and insecticides. The grapes are hand-harvested between the first and second ten days of October. Fermentation takes place partly in large oak vats and partly in stainless steel. It ages for approximately 24 months in 30-hl oak barrels and stainless steel, followed by at least ten months in the bottle.
