The Èureka Marabino Chardonnay is made from two different Chardonnay clones, trained using spurred cordon. One vineyard is planted on gray limestone soils, bordering a saia (drainage channels built by the Arabs), which provides cooler, more humid temperatures; the other vineyard is planted on deep, cool, black clay soils on the valley floor. It is a wine with its own identity, clearly reflecting the terroir in which the vines are grown, not imparting typical varietal notes, but expressing aromas and flavors typical of this area of southeastern Sicily. The grapes, vinified in stainless steel with the skins (spontaneous fermentation) for approximately fifteen days, mature in stainless steel until the following spring with continuous bâtonnage, carried out according to the phases of the moon.
