The Rossese Di Dolceacqua 'Poggio Pini' Tenuta Anfosso is produced from vineyards located on the hill of the same name, with a southeast exposure. The oldest part dates back to 1888. The vineyards, which are exposed in strips with slopes of up to 60%, are influenced by sea breezes, which enhance the characteristic Ligurian aromas, along with the Mediterranean scrub in which the vineyards are immersed. A portion of the initial grapes is not destemmed, the percentages of which may vary depending on the vintage. Fermentation on the skins takes place for approximately 6-8 days at a constant temperature of 26-28°C. Once fermentation is well underway, delestage and further pumping over are performed. Aged for 12 months in steel tanks and six months in bottle before release.
