Percarlo San Giusto A Rentennano is produced with 100% Sangiovese grapes, selected bunch by bunch from the finest vineyards, with a limited yield of approximately 0.8 kg per vine, often harvested beyond normal ripeness. Fermentation and maceration take place in glazed concrete tanks and last up to 30-35 days. The wine is then aged in French oak barrels, tonneaux, and barriques for 20-22 months, and the unfiltered wine ages for 18 months in the cellar. Most of the vineyards used for the production of Percarlo are located on soils of Pliocene origin, consisting of layers of sand and pebbles (tuff) 2 to 5 meters deep, beneath which lie clay beds. A smaller portion is located on galestro and alberese soils on the southwest side of the estate; The Corsignano vineyards, near Monti in Chianti, are located on decidedly more clayey soils. The average altitude is 270 meters above sea level.
