Vin San Giusto San Giusto a Rentennano is a sweet wine produced with 90% Malvasia and 10% Trebbiano grapes, hand-picked when perfectly ripe and left to dry naturally for approximately 120 days in a well-ventilated cellar. After pressing, the must is racked into small oak and chestnut barrels holding between 40 and 180 liters, sealed and stored under the roof, in an environment subject to seasonal temperature fluctuations. Here it ferments and ages slowly for 6 years, with 40% of the initial content evaporating and a final vinsanto yield of 10-12% of the initial grape weight. Before bottling, it is filtered drop by drop through Dutch-cloth strainers. This wine is suitable for very long aging and should be enjoyed at a cellar temperature of 10°C. This wine contains no added sulfites. Aged for 18 months in bottle.
