Ricolma San Giusto A Rentennano is made from 100% Merlot grapes, sourced from areas particularly suited to the varietal's characteristics. The grapes are hand-picked when perfectly ripe, later than local custom allows. Fermentation takes place in stainless steel tanks for approximately 18 days, followed by racking and pressing. Malolactic fermentation occurs spontaneously. After initial racking, the wine is aged in French oak barriques for 20-22 months. Once bottled, it ages for a further 6 months in bottle.
