Dolcetto d'Alba Vajrasi pairs well with game, mature cheeses, grilled meats and stews.

Dolcetto d'Alba Vajra is a selection of ancient Dolcetto biotypes, selected between 1978 and 1985 and grafted onto two of the most suitable plots on the Vergne hill, in the municipality of Barolo. These ''red-stalk'' vines produce a limited production of an intense, noble, and spicy Dolcetto. The Dolcetto harvest begins when the stems of the grapes turn red, usually around mid-September. A delicate fermentation of 20-25 days is followed by at least two rackings. It ages for 8-12 months before bottling.
