Cartology Alheit Vineyards aims to be a reflection of the Cape seen through its ancient vineyards. The cuvée is composed of rare and extraordinary parcels of mature bushes, made from historic grapes, namely Chenin Blanc and Sémillon. These grapes have been planted in the Cape for centuries. Cartology is the winery's calling card. It is the icon of their project and also seems to have become a standard-bearer for Cape wine in general.

Visual tasting
Crystalline, straw yellow in color with light golden reflections. Consistent.
Olfactory tasting
The nose is detailed and intriguing, with notes of ripe pear, sweet herbs, citrus juice and orange zest.

On the palate it is pure and clear, with good intensity and saline length.

Cartology Alheit Vineyards pairs well with curries, goose liver pâté, strong cheeses, raw fish, and oysters. It's also ideal with spicy dishes.

Cartology Alheit Vineyards is made with Chenin Blanc and Sémillon grapes. The grapes are hand-selected and whole-cluster pressed. The juice is lightly stabilized and fermented in a tumultuous manner in concrete vats, terracotta pots, foudres, or old barrels (various sizes). Fermentation can last from three weeks to eleven months. The wine is kept on the lees for approximately twelve months, then rests in tanks on the fine lees without fining for another six months before bottling. The winemaking process is very simple and meticulous.
