Vin Santo di Montepulciano Poliziano is produced with grapes from various plots characterized by clay-loam soil. The grapes are pressed at the end of January using traditional manual presses, after they have dried on reed mats in the attic for about four months. The must is then placed in small barrels, called caratelli, together with the madre (a precious 'ingredient' that every winery jealously guards), for a minimum of seven years.
