Vin Santo Serelle Ruffino is a typical dessert wine, and pairs perfectly with Prato's 'cantucci' biscuits. The grapes used to make Vin Santo are harvested very slowly in the vinsantaia, carefully selected in early December. The dried grapes are pressed in gentle, long cycles. The resulting must, dense due to its high sugar concentration, is transferred to 225-liter oak barrels and fermented in a temperature-controlled environment at 18°C. Once the right balance between alcohol and residual sugars is reached around mid-January, fermentation is stopped. After racking and clarification, the Vin Santo is transferred to oak barrels where it ages for approximately 3 years.
