Poliziano's Merlot 'In Violas' was born from two inspirational factors: the establishment of the Cortona DOC in 1999, the immediate affirmation of the area as a suitable location for international grape varieties, and the friendship with the Aliotti Tommasi family, owners of excellent land. In 2006, convinced of the unique potential of Merlot grown in Cortona's Pliocene clays, we began bottling In Violas.

Visual tasting

Clear, intense ruby red in colour with some purple reflections, quite consistent.

Olfactory tasting

Intense and quite complex, with vinous, herbaceous, and fruity notes of freshly cut grass. Quite refined.

Taste tasting

Dry, quite warm, soft, not very fresh and quite savoury, medium-bodied and slightly tannic.

What to pair wine with Merlot Poliziano 'In Violas' 2020

The Merlot ''In Violas'' Poliziano is recommended with red meats, roasts, poultry and semi-mature cheeses.

Poliziano's Merlot ''In Violas'' is vinified in stainless steel truncated-cone vats at a controlled temperature (26-30°C) with punching down and déléstage that integrate pumping over. Fermentation and maceration last 18-22 days, followed by a hot post-fermentation maceration (up to 32°C); micro-oxygenation between the end of alcoholic fermentation and the start of malolactic fermentation, carried out in 60-hl wooden vats. It ages on the fine lees until May-June with batonnage. French oak barriques (225 l) (approximately 80% new) for 16-18 months, with a further 6 months of bottle ageing before release.
