Maximo Umani Ronchi is produced from 100% Sauvignon Blanc grapes, which are pressed whole using a small, soft press. The resulting must, after static decantation, is fermented on its own yeasts at a temperature of 15°C for a month. Maximo ages for approximately a year in small stainless steel containers before being bottled.

Here, thanks to the unique climatic conditions created by alternating high humidity and drier breezes, at relatively low temperatures, the Sauvignon Blanc grapes are attacked by Botrytis Cinerea in its most noble form, giving this wine incredibly complex and rare flavors and aromas. Maximo is a unique wine in the regional winemaking scene.
