Cocchi's Alta Langa 'Toto Corde' sparkling wine is the expression of the centuries-old Piedmontese tradition of the classic method, blended with the structure and power of grapes grown in the Alta Langa. It is the flagship wine of the Alta Langa DOCG. Its quality comes from impeccable Pinot Noir and Chardonnay grapes, expertise in sparkling wine production, and a long fermentation period of at least 48 months in the historic cellars. Yields are limited; the presses, filled with 4,500 kg of grapes, yield 2,650 liters of Pinot Noir must or 2,800 liters of Chardonnay. The initial fermentation takes place in steel vats for three weeks, after which the wine is chilled to facilitate sedimentation. The cuvée is created in late winter by blending Pinot Noir and Chardonnay from the same harvest. The secondary fermentation takes place in stacked bottles and is completed with a long maturation in a cool, dark place for 4 years. The riddling is strictly manual on wooden racks with dégorgement à la glace. A small dose of liqueur d'expedition with 8 grams of sugar is added to perfect a well-balanced brut.
