The 'Maso Nero' Brut Zeni sparkling wine is produced with 100% Chardonnay grapes. After mashing, the must begins to ferment at a temperature between 18 and 20 degrees and then slowly carries out the second fermentation, the malolactic fermentation, which reduces the natural acidity. The resulting wine is bottled together with a fine blend of yeasts and sugars, to carry out the second fermentation in the bottle and obtain the classic foam. It rests for many years in the bottle to mature.
