The Ciro Picariello Brut Contadino is made with 100% Fiano di Avellino grapes. The Fiano used for the Brut Contadino is harvested slightly early to preserve the crisp fruit and maintain its pleasant acidity. Secondary fermentation in the bottle lasts 24 months. Disgorging is performed to expel the yeasts, and the wine ages for another 6 months in the bottle. A fine perlage, a pronounced acidic and mineral note, and an evolving nose that begins to hint at hydrocarbons.

Ciro Picariello's Brut Contadino is 100% Fiano di Avellino. The Fiano used for Brut Contadino is harvested slightly early to preserve the crisp fruit and maintain its pleasant acidity. The harvested grapes are placed in a pneumatic press, separating the first and second pressings. Natural fermentation begins at room temperature in stainless steel tanks. The partially fermented must is cold-decanted and bottled. The bottles are sealed with crown caps and laid horizontally for the second fermentation and secondary fermentation. The stacked bottles rest for at least 24 months before being re-corked. They are then disgorged and sealed with mushroom corks and wire cages. After disgorging, the Brut Contadino is further refined for at least three months before being released to the market.
