Spumante Alta Langa Blanc 'd Blanc Cocchi is a special cuvée that highlights the terroir's character through the expression of pure Chardonnay. The cuvée is composed of grapes grown in vineyards with white marly-limestone soil, which yields a savory and long-lived wine. The biotype cultivated is traditionally Burgundian. Cocchi is the only winery to produce an Alta Langa made exclusively from white grapes. The yield is modest: 5,500 kg of grapes yield 3,000 liters of Chardonnay free-run must.

Spumante Alta Langa Blanc 'd Blanc Cocchi is a special cuvée that enhances the terroir through the expression of pure Chardonnay. The cuvée is composed of grapes grown in vineyards with white marly-limestone soil that make the wine savory and long-lived, the biotype cultivated is of Burgundian tradition. Cocchi is the only company to produce an Alta Langa from only white grapes. The yield is limited, 5,500 kg of grapes yield 3,000 liters of Chardonnay free-run must. Fermentation takes place exclusively in steel vats for almost three weeks, after which the wine is left to rest on the fine lees. The cuvée is created in late winter with wines strictly from a single harvest. The secondary fermentation takes place in stacked bottles and is completed with a long maturation for 5 years. The riddling is done manually on wooden racks with dégorgement à la glace. Bianc 'd Bianc is an Alta Langa with a particularly low dosage. Its sugar content, limited to 8 grams, makes it a contemporary, rigorous, and seductive sparkling wine.
