The Rosso Piceno 'Roggio del filare' Velenosi is produced with Montepulciano and Sangiovese grapes, harvested by hand and transported in small crates. After destemming, fermentation takes place by placing the grapes in steel tanks with a programmable pumping over system and temperature control. Maceration on the skins lasts almost a month. The must is then transferred to new barriques from French cooperages, where it remains for over a year.
