How to taste it

Visual tasting
Crystalline, straw yellow in color. Fairly consistent.
Olfactory tasting
Iodine mineral notes, aromas of white and yellow-fleshed fruit, floral nuances, mimosa and chamomile in particular, and fresh notes reminiscent of Mediterranean aromatic herbs.
Taste tasting
On the palate it is fresh and savoury, vibrant with acidity and rich in fruit, with a long and invigorating finish embellished with a vibrant citrus note.

Peloro Le Casematte is produced with a blend of 65% Grillo and 35% Caricante. The grapes are harvested by hand into crates, starting in the second week of September. Vinification is done without the skins, with the addition of dry ice, and fermentation at a low temperature for approximately 15 days. It matures in stainless steel and then refines in the bottle for 3 months.
