Excellent with seafood appetizers, oysters, and raw fish, as well as authentically prepared seafood first courses and main courses, including sea bass cooked in salt. Cacio e pepe (a type of cheese and pepper). An all-day wine, from aperitifs to seaside meals.

The Chardonnay is harvested in the last ten days of August in crates during the coolest hours, destemmed, and transferred to stainless steel tanks for maceration on the skins for 2 to 4 days until the cap is raised and the grapes are drawn off. Fermentation begins spontaneously with the usual indigenous yeasts and continues at a controlled temperature. The Verdicchio and Malvasia are harvested approximately in the second ten days of September during the coolest hours. This is followed by soft pressing of the grapes with the stems and indigenous fermentation at a controlled temperature with Chardonnay inoculation.
