Ornus dell'Ornellaia is the fruit of a late harvest of Petit Manseng, a wine produced in extremely limited quantities, bringing a new dimension to the estate. In some vintages, the tiny 'Palmetta' vineyard offers perfect conditions for the production of this exclusive sweet wine. The name Ornus dell'Ornellaia is inspired by 'Fraxinus Ornus', the Latin name for the flowering ash, the tree that gave Ornellaia its name. A typical plant of the Mediterranean scrub, also known as the 'manna tree' for its precious sap, used since ancient times as a sweetener, the flowering ash, or 'Faxinus Ornus', perfectly alludes to the sweetness of Ornus dell'Ornellaia.

Ornus dell'Ornellaia pairs well with dry pastries, biscuits, cantucci, cakes, and mousses.

Ornus dell'Ornellaia is produced from a single harvest of Petit Manseng grapes. Upon arrival at the winery, each harvest produces a single batch, which is pressed and vinified separately. After a long, gentle pressing and a natural overnight decantation, the various batches are fermented in 100% new oak barriques at temperatures no higher than 22°C. Once the desired sugar and alcohol balance is reached, the fermentation is stopped. Malolactic fermentation is not performed. After several rackings, the wines age for 12 months, after which the various batches are blended. After bottling, the wine undergoes a further year of maturation before being released to the market.
