''Ionian'' is also a synonym for Negroamaro, the native grape par excellence of the Greater Salento region. Aged in French oak barriques, 50% new and 50% single-use, for approximately 12 months. Aged in bottle for approximately six months.

Negroamaro ''Jo'' Gianfranco Fino owes its name to the Ionian Sea, the sea that bathes the coast of Manduria. Jonico is also one of the synonyms of Negroamaro, the native grape par excellence of the Greater Salento region. It is produced with a light drying process on the vine, hand-picked with careful selection of the bunches, and transported by truck in an insulated container. In the cellar, destemming and soft pressing of the grapes take place, followed by maceration in 70 Hl stainless steel vats, with contact with the skins and must for three to four weeks. Aged in French oak barriques, 50% new and 50% single-use, for approximately 12 months. Bottled without filtration or clarification, it is released for consumption after approximately six months of bottle aging.
