Franciacorta SoloUva Brut is based on a simple concept: grapes are fruit and, as such, should be harvested when fully ripe. Harvesting occurs when the grapes are phenolically ripe; therefore, unlike the traditional method, where harvest is forced by man at technological maturity (i.e., the grapes are picked based on their acidity and sugar content), the SoloUva method is delayed. After harvesting, pressing is gentle, maximizing the must's acidity. Throughout all stages of winemaking, from primary fermentation to secondary fermentation and the addition of any dosage liqueur, homemade sugar (in the form of frozen must) is used, resulting in a product that is the natural expression of the fruit, without the need for external sugars.
