Franciacorta Corte Fusia Brut is the company's most carefully crafted product. Made from grapes from a single harvest, it represents the true expression of this terroir. Vinification is carried out using a pneumatic press, with the first and second pressings separated. After the must has clarified, selected yeasts are added for fermentation in temperature-controlled stainless steel tanks. This is followed by racking and a lowering of the temperature to approximately 10°C to prevent malolactic fermentation. Regular batonnage (stirring) is performed until the cuvée is assembled. In March, the cuvée is bottled, sealed with a crown cap, and laid flat for secondary fermentation. The stacked bottles remain in contact with the lees for a minimum of 18 months before being removed. They are then disgorged and dosed only with the same wine.
