Franciacorta Corte Fusia Saten is an extremely elegant wine, with a soft, creamy perlage. Vinified without skins in a pneumatic press, the grapes are gently pressed and the first and second fractions separated. After the must has clarified, selected yeasts are added for fermentation in temperature-controlled stainless steel tanks. This is followed by racking and a lowering of the temperature to approximately 10°C to prevent malolactic fermentation. Regular batonnage continues until the cuvée is assembled. In March, after adding the tirage liqueur, it is bottled, sealed with a crown cap, and stacked horizontally for secondary fermentation. The stacked bottles remain in contact with the lees for a minimum of 36 months before the remouage. They are then disgorged and dosed only with the same wine.
