Brunello di Montalcino Poggio di Sotto is produced from vineyards located at 200, 300, and 450 meters above sea level, with varying exposures and soils that range from rich in rock to very poor. The production area is Castelnuovo dell'Abate, in the Orcia River valley. The vineyard is trained using spurred cordon. The grapes are selected several times in the vineyard and are hand-picked in the cellar. Vinification takes place in wooden vats, with spontaneous fermentation and very long maceration, with open-air pumping over. Aged in 30-hl oak barrels for 48 months and in bottle for 8 months. The wine is not filtered before bottling.
